Plated bbq oyster mushrooms


I love this recipe and the cola bbq sauce is fantastic. Nearly everything I've made from Gaz Oakley is delicious, and I have one of his cookbooks. Be sure to watch the video demonstrating how to press the mushrooms. This recipe is just the mushrooms. Gaz includes a slaw side, but I often make some fingerling potatoes.



  • Pre-heat the oven to 400 degrees F.
  • Get the pan hot. Water should sizzle when splashed on top.
  • Use a good deal of oil.
  • Don't season right away.
  • Put the stem of the mushroom on the hot spots of the pan.
  • Press with another pan for a couple minutes.
  • Flip and press again.
  • Season with BBQ seasoning.
  • Add more oil before flipping.
  • Press again.
  • Season the other side.
  • Flip again.
  • Press.
  • Dip in sauce.
  • Place on parchment paper covered pan.
  • Drizzle with more sauce.
  • Place in oven at 400 degree F for 10-15 minutes.
  • Add mushroom water to the bbq sauce.‍
